This East Coast girl has recently traded in her New England Clam Chowda for California Rolls! Kasey has been whipping up delectable dishes in her kitchen since she was 10 years old. Combining ingredients and trying new concoctions became her favorite hobby. Kasey is a fabulous food blogger representing Kasey's Kitchen, her self-proclaimed food blog! Kasey attends a ton of fun food events around town and she is sharing her fun, healthy recipes with us every week!
A few weeks ago I had the chance to check out Tortilla Republic over on North Robertson. Being tucked away right next to SUR, I was curious to see if this would be just another “hoity-toity, mexi-cali fusion” place. Needless to say, I was PLEASANTLY surprised!
Tortilla Republic recently started doing brunch, so I jumped on the opportunity of a Sunday morning soiree in a heartbeat!
We started the brunch off with a piping hot green tea. Of course the bottomless mimosas and pear bellinis sounded amazing, but I was already in rough shape from the night before, so the tea and our waiter’s charm was the perfect cure!
To insure we got the best of all bites, my host Alexia and I chose a little bit of everything! We did the Seared Ahi Tuna & Sweet Potato Hash topped off with a poached egg, the TR Benedict (which was out of this world!) was on top of a manchego scone with bacon, arugula and a delicious hollandaise, and for our “dessert” we ordered the Fresh Corn & Blueberry Pancakes. Oh. My. Word! These are pure perfection. So good in fact that I HAD to get the recipe to share!
Tortilla Republic’s Fresh Corn & Blueberry Pancakes:
SIFT ALL TOGETHER AND MIX WELL
Mix wet ingredients until well incorporated, fold with spatula don't over mix, should be lumpy, let rest for 15 minutes
Take a cast iron skillet and spray with non-stick spray and pour batter into the skillet. Once the edges of batter start to bubble sprinkle some fresh cut corn kernels and fresh blueberries into batter. Then put the skillet in the oven at 350 degrees for 10 to 15 min.
