Last week at the Staples Center, Enrique Iglesias and Jennifer Lopez together performed two sold out shows. I can easily say that one of my favorite (and funniest) artists I've worked with is Enrique. I was able to watch his amazing performance and catch up with him after the show. It's easy to see why he is one of the biggest artists in the world!! Lucky for Enrique he has really good genes, and a lifestyle that involves a lot of movement. We talked about his favorite food, which is spaghetti, and came up with ideas for a really healthy version. Obviously, you can use whole wheat pasta but another great idea, which is even healthier, is using spaghetti squash as the pasta. 


Here is my favorite recipe :
  • 2 whole spaghetti squash
  • 1/4 cup extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 4 cups prepared marinara sauce
  • Parmesan cheese

Directions

Preheat the oven to 450 degrees F.

Split the squashes in half and scrape out seeds. Line an oven tray with aluminum foil. Season the spaghetti squash with olive oil, salt, and pepper. Place flesh side down and roast for 30 to 40 minutes until fully cooked. Remove from the oven and let rest until cool enough to handle.

Meanwhile, heat the marinara sauce in a large sauté pan.

When squash is cool enough to handle, using a large kitchen spoon, scrape the strands of squash from the inside of the skin. Toss the spaghetti squash in the pan with the hot marinara just long enough to get hot. Serve with cheese and enjoy.
